今回は遠火の強火、４２℃ぐらいで２４時間燻煙。
出来上がりは色から見て丁度良い燻蒸量。肉汁の垂れも無く綺麗に仕上がった。
赤い花はつるバラ、スーパーエクセルサ。
今回は燻煙箱の屋根が壊れたので、それをそのまま利用。
屋根を２センチ位ずらして風の通りをツーツーにしたんだな。
カナダのイヌイットの燻煙は、雪が掛からない程度の掘立小屋で行う。風は通りっぱなし。
その中心で焚火をし続けると言うシンプルなモノ。
それを思い出し、屋根をずらし熱気を逃がしながら、足元で火が消えない程度の焚火。
これが上手く行った。
ブルーガーデンの主役、ニゲラも満開。ブリックはモサモサ。
あー、終わった終わった。徹夜明けで眠いね～ブリック。
