寿司屋では生きた車エビを目の前で捌いてくれる。エビは直ぐ食べるのが一番旨い。
アワビはガリガリ食うのも野趣があるが、話をしながら1時間程してから喰うともの凄く旨い。
その点鯛は、相当時間が経っても食える。だから昔から珍重されたんだな。
そして昆布締め。鯛もイケるがヒラメの昆布締めは最高！昆布締めに一番合うのがヒラメ。
その地物のヒラメが手に入ったので昆布締め。
最近昆布締めの話は全然目にしない。今の人はやらないのかな。ヒラメを食うのにこんなに
旨い食い方って無いよね。
